Though I don't know how it will ultimately affect the collectible quality of the cars, the option package for the '08 Cobra seems to me to be a little splashier: Most '08 Cobras now listed on Ebay have both HID headlamps and the Navigation/DVD/MP-3 system. It might also be that those options were also available in '07, but the dealers are now dressing the cars to the hilt with options, to offset the rapid drop toward MSRP that is now glaringly apparent in the "Buy It Now" prices of Ebay-listed Cobras. (After all, more options = "ADP": additional dealer profit).
